Nettle pesto - 75g nettles- 100g cashew nuts- 1 lime - 1 clove garlic- 3/4 tsp salt- 150ml olive oilFill and boil the kettle. Add the just boiled water to a medium saucepan and add 1 tbsp of salt. Add the nettles and blanch them for 5 mins. Drain them and leave them to cool.Add the rest of the ingredients to a blender along with the drained cooked nettles and blend till smooth. If you prefer it chunky just pulse till you reach your desired texture. Taste and adjust the seasoning to your liking. Nettle detox juice- 100g wild nettles (2 large handfuls- 1 apple- cucumber- 50g chard of green leafy vegetable of choice- 1 limeGive your foraged greens a good wash and soak.
