WINTER PASTRY: A PASTRY FILLED WITH WINTER VEGETABLES

FULL RECIPE FOR WINTER PASTRY
Ingredients
2 packets of frozen pastry phyllo
For filling:
2 medium-sized onions
40 g (1 whole) garlic
100g baby spinach
300g (3 large) carrot
500g dandelion green
700g leek
tbsp. salt
tbsp. ground black pepper
cup olive oil

For sauce:
1 cup yogurt
cup grape seed oil
cup vegetable broth or milk
2 egg whites

For decoration:
2 egg yolks
Remaining (~1 cup) yogurt sauce
1 tbsp sesame seeds
1 tbsp black current seeds

Directions:
FILLING
Preparing Wash and peel the carrots, then, shred them and set aside
Discard the rough leaves of the leeks, wash and set aside
Wash the dandelions and set aside their fresh and green leaves
Peel and wash the onions and garlic, then, set aside
Dice the onions and the garlic then place them into a bowl
Thinly slice the leeks and place into a separate bowl
Separate the hard stems and the green leaves of the dandelions: Thinly cut the hard stems and place into a separate bowl. Chop the green leaves of the dandelions and place them into a separate bowl
Wash and drain the baby spinach, then, place into a separate bowl
Cooking
Pour cup of olive oil into a large pot; set the stove to a medium-high heat
Add the onion-garlic mixture and stir for 2 minutes
Then, add the hard stems of the dandelions, stir for 5 minutes
Add the shredded carrots and stir for 5 minutes
Add the leeks and stir for 3 minutes
Add the green leaves of the dandelions, stir for 5 minutes, until the leaves become soft
Add the baby spinach and stir for 2 minutes
Once all the ingredients become soft, add tbsp. of salt and tbsp. of ground black pepper.
Mix all the ingredients thoroughly; cover the pot with a lid set aside the filling to cool down to room temperature
Before using the filling, drain the excess water of the vegetables to prevent a mushy texture in the pastry
We need a cup of vegetable gravy to enhance the flavour, the rest of the vegetable gravy will be an elite ingredient for a delicious soup

YOGURT SAUCE
Separate the white and yolk of two eggs
Egg yolks will be used for the decoration
Mix the egg whites with tsp of salt and whisk them
Then, add cup of grape seed oil, 1 cup yogurt and whisk them together
Add 1 cup of excess vegetable gravy, then, mix all the ingredients and set aside the yogurt sauce

PREPARING THE PASTRY
Thaw the phyllos before opening the packets. Then, open the packets and place on a counter
Use 2 phyllos for each pastry roll
Pour 2 tbsp of yogurt sauce over the phyllo, spread the sauce evenly on the surface using a brush
Then, place 3 tbsp of filling along the long edge of the phyllo
And roll 2 phyllos to form the pastry as a long, uniform cylinder
Then, place the roll into an oven tray
Repeat the process until all the phyllos and the filling has been used
Once rolling the pastry is completed, mix 2 egg yolks with the remaining yogurt sauce whisk well
Distribute the sauce over the pastry rolls using a brush
Cut the rollas into smaller size before baking to provide clear-cut edges for the pastry
Decorate the pastry rolls scattering sesame seeds and black current seeds on top of them Winter pastry is ready to bake!!

BAKING
Place the pastry into 400 F (or 200 C) oven, bake it for 20-25 minutes, until it turns into a golden colour
Rest the winter Pastry for 10 minutes before serving

SERVING
Refine the cutting edges of the pastry
Then, place the portions into a serving plate

Winter pastry is a delicious combination of crispy phyllos and soft vegetable filling
