A bowl of crazy delicious hot soup full of nutrition to warm up a cold winter night, sound like a heaven, isnt it?I am sharing an old, exceptional winter soup recipe today.SULEYMANIYE SOUP is a recipe of the Ottoman Palace at 17 centuries. The name of the soup comes from Magnificent Suleyman, who rein the Ottoman Empire for almost a century!This traditional soup is a product of several centuries of culinary art and healthy diet practices!...It nestles the colour, flavor, and nutrients of multiple vegetables, grains, spices, and beef!Simply enjoy eating healthy, but tasty!!By @FAIRIESCUISINE SULEYMANIYE SOUPIngredientsThe meatballs:1/4 cup fine bulgur1/4 cup hot water1 shallot400 g ground beef tbsp. dried coriander tbsp. ground black pepper tbsp. salt1 tbsp pepper pasteThe vegetables1 small potato1 carrot1 small squash100 g baby spinachFor cooking:50 g butter1/3 cup olive oil2 garlic cloves2 tbsp flour1 tbsp tomato paste (optional)6 cup (1 L) chicken broth (or water) tbsp. saltDirectionsPlace cup of fine bulgur into a bowl, pour cup of hot water over it and cover the bowl with a lid; set the bulgur aside for 8 to 10 minutesMeanwhile, finely grate the onion into a large bowlCombine tbsp. of dried coriander, tbsp. of salt, and tbsp. of ground black pepper in a large bowlThen, add the softened bulgur, 1 tbsp of pepper paste and the ground beef into the same bowl and knead the ingredients for 8 to 10 minutes or until the mixture develops a dough-like plasticityFlatten the mixtures surface to keep it soft and moistSpread 2 tbsp of flour over a large plateUsing the spiced bulgur & meat mixture, form 1 cm-wide balls and lightly coat these balls with flour to keep their forms stableCall the youth for this long but fun process to encourage them cooking helping and chattering in tune!!(Traditionally, women in the neighborhood come together and do this work while they are chatting, joking, and enjoying the process) Rock the plate from time to time to coat the balls with flour, thoroughlyThe hard work is done easily if it is shared with the people you love!!You can always prepare these balls days earlier, freeze them and use when you need.PREPARING THE VEGETABLESPeel and wash the potato and grate it into a bowl.Wash, peel, and grate a carrot into the bowlWash and grate one squash and add into the bowlWash and drain the baby spinach, place a separate bowl, then set asideCOOKINGSet the stove to medium-high heatPlace 100 g butter into a medium-sized potAdd 1/3 cup of olive oil to prevent browning the butterAdd the minced garlic cloves and 2 tbsp of flourBriskly stir the mixture for 2 to 3 minutesWhen the mixture turns to a beige/yellow colour, add the grated vegetables, and stir for 1 to 2 minutesDissolve 1 tbsp of tomato paste in 6 cups of water and add into the pot. Then, bring the mixture to a boil on medium-high heatNote: Traditionally, Suleymaniye soup also includes some lentil.
