1. Heat bacon grease. 2. Add onion and fry until golden. 3. Add flour, salt and pepper and cook until light brown (like a roux), stirring constantly. 4. Add canned tomatoes, sugar, bay leaf and celery leaves or celery salt. 5. Cook for another five minutes. 6. Remove bay leaf. 7. Rub through a strainer or serve without straining for chunkier sauce. 8. Adjust seasonings to taste. ---------------------------------------------------------------------------
