1. Preheat oven to 400°F. 2. Chop all vegetables into large pieces. 3. Combine all ingredients and mix well. 4. Place in an oven safe tray, be sure vegetables are evenly coated with oil and vinegar. 5. Roast for 50 minutes, or until veggies start to char. 6. Serve at room temperature for tapas. 7.
