1. In a large pan, mix broth and coconut milk. 2. Add green onion, garlic, thyme, and over medium low heat bring to boil. 3. Add the rice and stir gently for about 2 minutes. 4. Continue cooking on medium low heat. 5. Add the 2 peppers on top of rice. 6. Cover pan. 7. Simmer for 20-30 minutes or until rice is cooked and liquid is absorbed. 8.
