A-Jaad - Thai Cucumber Cool Down


1. Combine vinegar,sugar, and salt in a small pan. Cook, swirling occasionally, on low until sugar disolves, about 2 minutes.

2. Turn off heat, add chili, and let cool.

3. Place cucmbers and shallots in a bowl.

4. Add vinegar mixture and stir.

5. Just before serving add the chopped cilantro & stir.

6. Garnish with whole cilantro leaves.
