1. Preheat oven to 350 degrees. 2. Cook beef in a large skillet over medium-high heat, stirring until browned and crumbly. 3. Drain. 4. Add seasoning mix and stir. 5. Grease an 8-inch round casserole. 6. Place half of tortillas over bottom. 7. Layer with beef, 2 cups Monterey Jack and onion. 8. Place remaining tortillas over onion. 9. Pour enchilada sauce over tortillas. 10. Bake until tortillas are soft and juices bubble, about 35 minutes. 11. Layer remaining cheese over tortillas. 12.
