1. whisk eggs, milk, sugar and vanilla essence until well blended. 2. pour mixture into 6 ramekins. 3. simmer the custards for about 10 minutes in a pan of boiling water. 4. remove pan from the heat and stand covered with lid until fully set. 5. refridgerate until well chilled. 6. just before serving, pour over a tablespoon of maple syrup. 7. top with mandarin segments. ---------------------------------------------------------------------------
