1. Heat the oil in a saucepan. Add the onion, ginger, garlic, and bay leaves, and cook for four minutes, or until the onion is soft. Add the tomato, turmeric, chili powder, cumin, coriander, 1 tsp salt, and 1 cup of water.

2. Bring to a boil, then reduce heat and simmer for three minutes.

3. Add the garam masala and eggs, then simmer for a minute or two to warm the eggs.
