1. In a large bowl, combine apples, onions and celery. Sprinkle with the juice of one lemon to avoid discoloration; set aside. 2. In a blender, or whisk in a small bowl, blend mayonnaise, tahini, honey and remaining lemon juice until mixture becomes thickened. Toss with apple mixture. Cover and refrigerate until time to serve. 3. Just before serving, toss salad with spinach.
