1. Heat olive oil in a heavy large skillet over medium-high heat. 2. Add onion, red pepper, carrot and celery. 3. Saute until vegetables begin to soften, about 7 minutes. 4. Add rice and stir to coat well. 5. Add broth and bring to a boil. 6. Cover skillet, reduce heat to low and simmer until rice is tender and broth is absorbed, about 20 minutes. 7.
