Aubergine (Eggplant) Balls


1. Mince eggplant, I use my food processor, and drain.

2. Place eggplant into bowl; add egg and flour. Mix thoroughly.

3. Shape into balls and fry in oil until browned, transfer to serving dish.

4. Saute peppers, onions, carrot, and tomatoes until tender.

5. Pour vegetables over egplant balls.
