Aubergines Espanol


1. Slice the aubergines into 1/4 " rings.

2. Sprinkle with salt and allow to stand for 30 minutes.

3. Wipe the moisture from the aubergines.

4. Heat the oil in a frying pan.

5. Season the flour with salt and pepper.

6. Coat the slices with flour, then dip into the eggs.

7. Fry till golden brown, dry on paper towels.

8. Drizzle the cane honey over the slices and enjoy.
