1. Place ham in a large saucepan and cover with cold water; add the zest from one orange, 1 lime, bay leaf, parsley, and peppercorns. 2. Bring to a boil, over high heat; cover, reduce heat to a simmer, and cook 2 hours. 3. Preheat oven to 425 degrees F. 4. Once ham is cooked, allow to let cool to touch, remove from pan, then transfer to a cutting board; pull off the skin, but leave the fat on the meat. 5. Combine garlic, oregano, chilies, juice of 1 orange, juice of 2 limes, and sugar in a bowl; season with black pepper. 6. Rub all over ham, roast in oven until golden, about 20 to 25 minutes. 7.
