1. Method. 2. Split the vanilla bean and scrape the seeds into the cream. 3. Add the scraped bean to the cream and heat until it just begins to simmer and then remove from the heat. 4. In a bowl that fits into a medium-sized saucepan, whisk the egg yolks until they are light and fluffy. 5. Pour the hot cream over them while continuing to whisk. 6. Add the honey and place the bowl over a saucepan of just simmering water until the mixture thickens enough to coat the back of a spoon. 7. Churn in an ice cream machine until firm then place in the freezer.*. 8. Mix the walnuts, cinnamon and sugar and spread on to a plate. 9.
