Balsamic Roasted Sausages


1. Heat the oven to 425°F.

2. Place the sausages in a roasting tin with half the oil and the thyme sprigs. Cook for 10 mins then add the mushrooms and tomatoes and drizzle over the remaining oil and the balsamic vinegar. Cook for a further 10 mins until the sausages are golden brown and cooked through.

3. Serve the sausage mixture piled onto crusty bread rolls and some ketchup or relish if you like.
