1. Cut noodles into pieces, 1 1/2" long and 1/2" wide. 2. Set aside. 3. Heat 2 tbsp of oil in wok to 400°F. 4. Add Chow Fun, and stir-fry quickly until it is well heated. 5. Add 1/2 tsp salt and the soy sauce. 6. If it's too dry, add the chicken stock. 7. Remove from wok. 8. Heat 2 tbsp of oil in wok to 400°F. 9. Stir-fry pork for 1 minute. 10. Add bok choy, sprouts, and scallion, and 1/2 tsp salt. 11. Stir-fry for 2 minutes (may be prepared in advance to this point). 12.
