1. Heat oil in medium saucepan over medium heat until hot. 2. Add shallots; sauté 1 to 2 minutes or until soft. 3. Add rice; cook 1 minute, stirring constantly. 4. Add tomatoes, salt, pepper and stock; mix well. 5. Cover; bring to a boil. 6. Reduce heat to low; simmer 15 minutes or until liquid is absorbed and rice is tender. 7.
