Beef And Vegetable Stew With Roll


1. Wash and peel onion. Cut into thin slices. Cut beef into 1/2-inch cubes.

2. Spray a 10-inch non-stick skillet with non-stick cooking spray; heat over medium-high heat.

3. Cook onion and beef in skillet for about 5 minutes, stirring occasionally until beef is browned.

4. Stir in vegetables, tomato sauce, vegetable juice, and beef broth.

5. Heat to boiling; reduce heat. Simmer uncovered for 5 minutes, stirring occasionally until vegetables are tender.

6. Serve stew with a whole wheat roll and margarine.
