Beef Mushroom Barley Soup


1. In medium saucepan, brown ground beef. Remove to a plate. In same pan, saute mushrooms and garlic in butter for 5 minutes (med-low heat). Stir in the browned ground beef, broth, barley and soy sauce. Bring to a boil. Reduce heat; cover and simmer for 20 minutes.

2. Add the carrot, dill, salt and pepper (if desired). Cover and simmer for 15 more minutes, or until barley and carrot are tender.
