Beefy Mexican Vegetable Stew


1. Place beef in a large pot. Add just enough water to cover. Bring to a boil. Cook, stirring until beef is tender, 1-2 hours.

2. Add garlic powder, onion powder and cumin and stir until meat is well coated.

3. Add tomatoes with juice, beef and chicken broths. Bring to a boil.

4. Stir in chiles and potatoes. Season with salt and pepper to taste. Boil until potatoes are soft, about 15 minutes. Add corn and cook 15 minutes longer.
