Beet Salad With Chives (Salatat Shamandar)


1. Boil the beets until tender.

2. When beets are cool enough to handle, peel, dice, and place in a salad bowl.

3. Stir in garlic, cilantro, chives, olive oil, vinegar, salt and pepper.

4. Chill for at least 1 hour.

5. Stir, sprinkle with parsley and serve.
