1. Cook brown rice according to package directions and set aside. 2. Chop, onion, celery, carrot and mince garlic. 3. Place olive oil in a large skillet and heat over medium-high. Add the onion, garlic, carrot, and celery and stir to combine. Continue to stir until vegetables are tender and aromatic; about 5 minutes. 4. Add the cooked brown rice to the skillet and stir well to combine all ingredients. 5. Continue to heat until rice is hot. 6.
