1. Heat 1 Tbs. oil in large skillet. 2. Add onion, celery and carrot. 3. Saute until onions are transparent and carrots are crisp tender, about 5 minute. 4. Push veggies to one side of skillet and scramble eggs in empty side. 5. Mix eggs and veggies together. Set aside. 6. Heat 1 Tbs. oil in skillet over high heat until very hot. 7. Add cold rice to skillet and stir well. 8. Add chicken broth to skillet. 9. Stir fry rice, stirring constantly, until all liquid is gone. 10. Add meat to skillet and cook for about a minute more. 11. Add egg and veggies to skillet. 12. Stir in soy sauce and heat until warm. ---------------------------------------------------------------------------
