Bifana Pork


1. Crush the garlic with the salt and mix with the wine.

2. Marinate the pork in this mixture for 1 hour.

3. Heat a large frying pan and add the lard and oil.

4. Add the chicken stock, piri piri, bay leaves and any remaining marinade.

5. Bring to a simmer. Add pork.

6. Cover and cook until the pork is tender, about 20 minutes.
