Black Bean And Rice Skillet


1. In a frying pan, saute onion and bell pepper until soft (about 5 minutes).

2. Stir in beans, broth, rice, chili powder, thyme, garlic and bay leaf. Bring to boil. Reduce heat and simmer covered until rice is done: 20 minutes for white rice, 40 for brown rice.

3. Remove from heat. Remove bay leaf.

4. Sprinkle cheese on top and serve.
