Mayonnaise: 8. Combine eggs, lemon and mustard in food processor. 9. Process until well-mixed and slowly drizzle in oil until emulsified. 10. Check continually for texture, salt and pepper to taste. 11. Refrigerate. 12. Citrus Supremes: 13. Peel citrus, removing all pith. 14. Carefully slice citrus between sections to liberate sections. 15. Reserve. 16. Thai Pepper Essence: 17. Combine all ingredients and refrigerate for at least one hour. 18. Vanilla Oil: 19.
