Bolero Chicken Soup


1. For Spicy Chicken:

2. Place chicken breasts in slow cooker.

3. Combine remaining Bolero chicken ingredients and pour over chicken.

4. Cover and cook on high until chicken is done, about 3 hours.

5. Shred chicken into sauce.

6. For Soup:

7. To the slow cooker add: onion, carrots, chilies, chicken broth, cilantro, roasted tomatoes and lime juice.

8. Continue on high for 2 hours. Serves 6.

9. Serving suggestion: Ladle into bowls and garnish with a dollop guacamole. Serve with tortilla chips.

10. Baker’s Secret: Spicy Chicken can also be used in tacos, salads, quesadillas and burritos.
