Brandi'S Minestrone Soup


1. In a large soup pot heat oil.

2. Add onions and cook until golden.

3. Then add celery and carrots and cook over low heat, stirring occasionally, for about 5 minutes.

4. Add beans, bay leaf, thyme, and toss for a minute.

5. Then add the tomatoes and their juice, and salt and pepper to taste, and the beef stock.

6. Bring to a boil, reduce heat and simmer for one hour.

7. Add zucchini, cabbage,and cook until veggies are tender.

8. Finally, add your pasta and cook covered for about 10 minutes.

9. Ladle into bowls and add freshly grated parmesan cheese.
