1. Separate the eggs. 2. Beat the cream until soft peaks form. 3. Stir in the brandy (more if desired- according to taste). 4. Beat the 2 egg whites until stiff. 5. Gradually beat in the caster sugar- a little at a time. 6. Continue to beat until all the sugar has dissolved. 7.
