1. Wash potatoes well and place in salted water. Bring to boil and cook till fork tender (15-20 minutes). 2. Mix oil with garlic. Set aside. 3. 5 minutes prior to the potatoes being done, preheat the broiler of your oven. 4. Remove potatoes from the water and place on a baking sheet. Using a paper towel and your palm, crush the potatoes. 5. Pour some garlic oil over each potato. Sprinkle some salt and pepper. Add some Parmesan/grated cheese and chives to each potato. 6. Broil until nice and crispy (7-10 minutes). Serve immediately. ---------------------------------------------------------------------------
