Buttermilk Pudding


1. In large mixing bowl, cream butter and sugar together.

2. Add egg yolks, one at a time and incorporating into mixture.

3. Add the flour, salt and both milks, alternating dry and liquid ingredients and combining thoroughly after each addition.

4. Add vanilla.

5. Beat egg whites until stiff but not dry.

6. Fold egg whites into mixture.

7. Pour into deep heat-proof bowl and bake at 180C for one hour.

8. Serve with berry sauce of your choosing.
