1. Soak dried beans overnight. 2. Drain. 3. Pour oil into soup pot. 4. Add garlic, onion, & vegetables. 5. Cover pot & simmer 15 minutes, stirring often. 6. Add soaked beans, soup stock, & seasonings. 7. Cover & simmer until beans are tender, about 1 1/4 hours. 8. Add spaghetti or rice, & simmer 15 minutes longer, stirring occasionally. 9.
