1. Bring the chicken stock to the boil. 2. Add the clams and cook until the shells open. 3. Remove the clam flesh and set aside. 4. Heat the oil in a pan and sauté the garlic and baby leeks until they are soft. 5. Add the cooked clams and season with nuoc mam and shrimp paste. 6. Bring to a boil. 7.
