1. Bring the chicken stock to the boil.

2. Add the clams and cook until the shells open.

3. Remove the clam flesh and set aside.

5. Add the cooked clams and season with nuoc mam and shrimp paste.

6. Bring to a boil.

7. Add the chicken stock and star fruit, then immediately turn off the heat.
