Caramelized Cabbage


1. Heat lidded skillet over a medium heat and add butter.

2. Saute the onion and bacon in the butter until bacon begins to render fat and onion is just translucent.

3. Add sliced cabbage.

4. Place lid on skillet to allow cabbage to soften.

5. Cook 4-5 minutes, stirring occasionally.

6. Turn heat up to high and stir fry for a few minutes.

7. The cabbage should begin to colour and caramelize with the onions.

8. Season with salt and pepper.

9. Serve immediately.

10. Can be mashed into plain mashed potatoes for a unique champ or "bubble and squeak" if re-fried.
