1. Bring water and black beans to a boil, simmer 5 minutes. 2. Cover tightly and let stand for 2 hours. 3. Simmer 90 minutes until beans are cooked. Dump into a colander to drain. 4. Saute carrot, celery, onion, garlic, coriander, cumin and vegetable oil. 5. Add beans, vegetable stock, and uncooked rice. 6. Simmer gently 1 hour. 7. Add remaining ingredients and pepper to taste. 8. Heat through and serve. ---------------------------------------------------------------------------
