Caribbean Chicken Kebabs


1. Cut the chicken in bite-sized chunks and place in a bowl with the lime, rum, sugar and cinnamon.

2. Toss well and let stand for 1 hour.

3. Save the juices and thread the chicken onto four wooden skewers, alternateing with the mango cubes.

4. Cook under a hot grill or barbecue for 8-10 minutes, until the chicken is tender and golden brown.

5. Serve with rice.
