Caribbean Pina Colada Pudding


1. Have an ungreased 8 inch baking dish ready.

2. In a medium saucepan, combine milk, cornstarch, and brown sugar. Mix well to dissolve cornstarch.

3. Cook over medium heat, stirring constantly, until mixture comes to a boil.

4. Continue to cook and stir for 2 minutes. Remove from heat and stir in extracts.

5. Add bread cubes and pineapple. Mix gently and thoroughly.

6. Spoon mixture into baking dish, sprinkle with coconut.

7. Cover and chill.
