5. Place the cinnamon sticks, cloves, fennel seeds and peppercorns in a spice grinder or coffee grinder. Process until finely ground.

6. Add the freshly grated nutmeg and combine well.

7. FOR THE FISH:

8. Coat the fish with the spice rub and pan sear to rare or medium rare.

9. Serve immediately, with the mango salad on top and alongside.
