1. Place the pork and sauces in a medium bowl; toss to coat; cover and refrigerate for 2 hours, or overnight; drain the pork, reserving the marinade. 2. Heat the oil in a hot wok; add the pork in two batches; stir-fry for 5 minutes or until it is just cooked through; remove from the wok and cover to keep warm while cooking the second batch. 3. Place the reserved marinade in a small saucepan; bring to the boil and gently simmer for 5 minutes; remove from the heat and cover to keep warm. 4. Heat tortillas according to the packet directions; divide the pork among the tortillas; top with onions, carrot and capsicum; roll up tightly to enclose the filling; secure with a toothpick. 5. Serve the tortillas with the warm marinade as a dipping sauce. 6.
