Cheese Tortellini And Italian Sausage Soup


1. In a 5 quart Dutch oven, brown sausage into bite size pieces. Drain fat, reserving one tablespoon.

2. Saute onions and garlic in reserved sausage fat.

3. Stir in broth, water, wine, tomatoes, basil, oregano, tomato sauce and sausage. Bring to boil.

4. Reduce heat and simmer uncovered for 30 minutes. Skim off fat.

5. Stir in zucchini, basil and parsley. Simmer for another 30 minutes covered.

6. Boil tortellini in water until just done, drain. Add to soup and simmer another 5 minutes.

7. Serve with basil and Parmesan cheese on top.
