1. Blend together the cashews, nutritional yeast, lemon juice, salt and water. 2. Rinse quinoa 2-3 times under cold running water. 3. Heat saucepan over medium heat, add olive oil and toast quinoa for 5-10 minutes or until golden. 4. Add cashew mixture and the salsa, stir, and bring to a boil. 5. Cover and simmer for 15-20 minutes or until most of the liquid is absorbed. 6. Remove from heat and allow to sit five minutes with lid on. 7.
