Cherry-Vanilla Rhubarb Butter


1. Combine rhubarb and sugar in a large casserole dish. Cover and refrigerate overnight.

2. The next day, heat the oven to 350°F.

3. Stir the cherry juice into the rhubarb and place the dish in the oven.

4. Bake, stirring every hour or so, for 4 hours.

5. Stir in the lemon juice and vanilla.

6. Can 10 minutes in a waterbath.
