1. Slice chicken cutlets lengthwise, into strips. 2. Slice steak into thin strips, place both in a bowl. 3. Into a small bowl, grate 2 Tsp lime peel and squeeze 2 T juice. 4. Add 1/4 cup soy sauce, grated ginger root, sugar and minced garlic. 5. Mix well with a fork. 6. Pour over meat stips. 7. Cover and refrigerate for 30 minutes to marinate. 8. Prepare Spicy Peanut Sauce. 9. Combine peanut butter, water, rice vinegar, 1 T soy sauce, molasses and red pepper in a medium bowl until smooth. 10. Thread meat strips onto skewers, accordion style. 11. Grill over medium heat 3 to 7 minutes, turning once, until just cooked through. 12. (DO NOT OVERCOOK!)
