1. Cut the chicken into thin strips or cubes. 2. Bring the stock to a boil. 3. Add the soy sauce, mirin, and sugar. 4. Bring back to a boil. 5. Add the chicken, reduce the heat and simmer 5 minutes. 6. Stir in scallions and simmer 1 minute. 7. Lightly stir the eggs in a bowl and add eggs to the pan. 8. Simmer 2 minutes. 9.
