1. Boil chicken with the celery leaves in a large pot.

2. Once cooked, leave to cool, strain and save stock.

3. Sauce:.

4. In a large frypan, melt the butter, add the flour, then 600ml of the saved stock, then add the rest of the ingredients.

5. Break the chicken into bite size pieces, and add to the sauce.

6. Simmer for 40 minutes.
