1. Pre-heat oven to 400F degrees. 2. Wash and dry chicken. 3. Loosen skin from body in areas of the neck, armpits and legs. 4. Evenly slide pepperoni pieces between skin and body, starting at the top, working down. 5. Salt and pepper bird, tuck the wings in. 6. Slide chicken onto roasting stand, brush with oil. 7. Place in 400 oven for 20 minutes. 8. Lower heat to 325 and finsh out the hour. 9. Remove from oven, let rest 15 minutes. 10.
