1. Preheat oven to 350 degrees Fahrenheit. 2. Line a cookie sheet with parchment paper (I sprayed mine with olive oil cooking spray). 3. Place chicken in a large mixing bowl. 4. Sprinkle salt and pepper over chicken. 5. Using a food processor mince the garlic, onion and cilantro together. 6. Add to the chicken, the grated carrot, quinoa, panko crumbs and egg. 7. Mix well using your hands. 8. Shape into small meatballs. 9. Bake for 15 minutes and turn over and bake for 20 minutes more. 10. I freeze 1/2 for another meal. 11. In a medium saucepan place meatballs and stir in Tikka Masala Sauce. 12. Cook on low until simmering and meatballs and sauce are hot. ---------------------------------------------------------------------------
