Chicken Rice Soup


1. Heat oil in large heavy saucepan.

2. Sauté chicken.

3. Add garlic,onions,shallot,celery and carrots.

4. Cook stirring occasionally for app. 20 minutes.

5. Add rice and continue to cook for another 5 minutes.

6. Add remaining ingredients.

7. Bring to a boil; reduce heat; cover and.

8. Simmer for app 1 hour or until vegetables and rice are cooked.

9. Serve with grated parmesan cheese and freshly ground pepper.
